The AIVALI Winery began in 1997. In the privately owned vineyards of a total area of ​​35 acres, the varieties Agiorgitiko, Syrah, Cabernet Sauvignon and Merlot are grown. The unique goal of the vineyard is the production of high quality products. For this reason, in addition to significant investments, low returns are also selected. The estate is inspired by the philosophy of non-intensified agriculture with almost zero fertilization so the root system is deeply looking for food and humidity. Vinification is done without any industrial complexion. Wines are not stabilized and filtered, thus keeping their authenticity and unique character acquired from the terroir that grow.
